Papa Ganache Brownies, Brookies & S'More Baking Class

A few weeks back, I took a baking class from the same bakery but this time it was to learn some specialty desserts. I've struggled with how to bake gluten-free brownies for the past eight years. No recipe online gave me the secrets I learned from Chef Coco at the bakery!

I learned how to know when they're finished via sight and touch; and how to handle them afterward so they set very well. I made them recently at home (modifying a box of brownie mix I already had) and they came out fudgey and just how I remembered them in my gluten-eating days. I will use up the box mixes I have, and then I'll be making these bad boys from scratch (and probably most future gluten-free desserts!).

The sad part is though, it is a bit longer of a process after they are done baking than letting them cool simply and cutting! So, I have to plan ahead, but they keep in the fridge or freezer so I can make a batch and keep them for another time at least!

Below are the s'mores bars we made that were so delicious. I don't think I will miss making real s'mores with having these now as an option!

We also made a raspberry (or I chose strawberry) crumb bar as well. It was like a perfect coffee dessert and I will make it again at some point, though I'm not as much of a fruity-dessert type of person. I chose strawberry since my boys love strawberry flavored foods.


The chefs take the summer off in offering baking or cooking classes, but I think I found my new favorite place to go learn how to cook or bake vegan and gluten-free. It's so lovely to show up and know I won't be sickened by anything I am making, and that I can eat it right away afterward! I'll be looking to take some cake, cupcake, or other classes this fall for sure. Their baguette/breads class was great, and I recommend it to a few friends who had much success with their gluten-free pasta making class, too!
